Fish Chowder

I am thinking of Legal Seafoods in Boston and their incredible fish chowder (not their clam which is also good). It is one of the two best I've had, the other being in Halifax at a little diner called the Esquire. Legal's always struck me as especially delectable as the fish therein had a curiously chewy (not tough) texture. I have tried without success to emulate. Still on the chowder topic - if you want to get tuned up for wanting a great chowder, there is chapter fairly early in Moby Dick when the narrator, Ishmael, boards at a house in New Bedford where, as I recall, all three meals a day were chowders. Melville's descriptive lines always make me feel  .
