Why not use your cans of pureed pumpkin for something other than pies and desserts? Try making something different with them like our rich, Creamy Pumpkin Soup!

Creamy Pumpkin Soup

Ingredients:
 
1/4 cup butter or margarine (1/2 stick)
 
1 onion, small, finely chopped
 
1 garlic, clove, finely chopped
 
2 tsp. C&H Pure Cane Dark Brown Sugar, Packed
 
1 can chicken broth (14 1/2 oz.)
 
1/2 cup water
 
1/2 tsp. salt
 
1/4 tsp. pepper, ground black
 
1 can pumpkin, LIBBY`S 100% Pure (15 oz.)
 
1 can evaporated milk, NESTLE CARNATION (12 oz.)
 
1/8 tsp. cinnamon, ground


Instructions:
Melt butter in large saucepan over medium heat. Add onion, garlic and sugar; cook for 1-2 minutes or until soft. Add broth, water, salt and pepper; bring to a boil, stirring occasionally. Reduce heat to low; cook, stirring occasionally, for 15 minutes. Stir in pumpkin, evaporated milk and cinnamon. Cook, stirring occasionally, for 5 minutes. Remove from heat. Transfer mixture to food processor or blender (in batches, if necessary); process until smooth. Return to saucepan. Serve warm.
 
Serving Size: Makes 5 cups

    What are some of your favorite pumpkin-inspired recipes?


    These are amazing! They'll be gone in seconds flat. Pumpkin Chocolate Chip Cookies:

    Ingredients:
    3/4 cup white sugar
    1/4 cup vegetable oil
    2 eggs
    3/4 cup canned pumpkin
    1/4 cup water
    1 1/2 cups all-purpose flour
    3/4 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon ground cloves
    1/2 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/4 teaspoon ground nutmeg
    1/2 cup semisweet chocolate chips

    Directions:
    1. Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.
    2. Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt.. Add wet mixture and stir in chocolate chips.
    3. Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20 to 25 minutes.

    ...and top it with this Cream Cheese Frosting:

    Ingredients:
    2 (8 ounce) packages cream cheese, softened
    1/2 cup butter, softened
    2 cups sifted confectioners' sugar
    1 teaspoon vanilla extract

    Directions:
    In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar.


    ...but you may have to make your own pumpkin puree.
