Mild cheese ball

All of my cheese ball recipes are sharp, hot or highly seasoned. Does any one have a mild cheese ball recipe they could share? I will be using a highly seasoned cracker (lots of carraway seed and black pepper) so I need a milder spread.

I don't have an exact recipe, but think if you use a mild cheese, like cream cheese and lightly season it, that should work. Maybe season it with a touch of garlic or onion powder. You can always add parsley and paprika for a little color. Maybe roll ball in some sliced almonds ..?

i agree with cream cheese!! you won't need any heavy spicing/herbs if the crackers have a ton of flavor... just soften it and mix in a bit of garlic (powder or fresh minced) and some chives, dill, marjoram or chervil (or a combo) and just a touch of onion powder. will be just enough to compliment the crackers.

Thanks. I think y'all are right about the ceram cheese. I was also thinking about the Old English cheese in a jar. If you want a really good cracker, try Mary's Gone Crackers, the black pepper variety. Added benefit: they're gluten free, so they may be in a health food section of the grocery. Very crispy, but not crumbly.

Speaking about cheese in a jar, the Pimento one should make a nice cheese ball also.

Ingredients: 8 ounces mild cheddar cheese -- shredded 8 ounces cream cheese -- softened 1/2 teaspoon Worcestershire sauce 1 green onion -- minced 1/4 cup beer -- at room temperature dash cayenne pepper Directions: In a large mixing bowl, combine all ingredients. Mix with electric mixer until well blended and fluffy, scraping sides often. Serve with crackers, bread, or veggies.

Here is a recipe I have used for years for a great tasting cheese ball: Holiday Cheese Ball 2 (8 oz.) packages cream cheese 1/2 cup mayo 1 (8 1/2 oz.) can crushed pineapple (drained) 2 cups chopped pecan 2 tbsp. chopped onion 1 tbsp. seasoned salt Soften cream cheese and add mayo. Stir in pineapple, 1 cup of nuts, oinion and salt. Chill well (I put in freezer for about 10 minutes). Form into a ball and roll in remaing 1 cup nuts.

Thanks for the recipes and ideas.They all sound good. I think I may use my homemade pimento cheese with a little onion and garlic. I know how to do that.

If you take the recipe posted by analei and substitute sharp or extra sharp cheddar for the mild you have a form of Kentucky Beer Cheese. It is more or less at the far end of the taste scale and not what at all what mbrookes asked for but very good in its own way. GOOGLE for innumerable variations.

I have been making this cheese ball for 30 years I clipped from a magazine: "The Sun Ball." 8oz soft cream cheese 1 tsp dijon mustard 1/2 tsp garlic powder 2 tbs white wine 1 cup pitted black olives chopped 2 cups shredded cheddar 2 tbs minced parsley 1/2 cup sunflower nuts Mix cream cheese with mustard, garlic powder and wine till smooth, add in olives, cheddar and parsley. Form into a ball, roll in sunflower nuts with additional parsley (or a little sweet paprika) if desired. I chill till next day. Serve with Ritz crackers. This would do fine with a seasoned cracker too..

My version (very close to these) is like this: 8 oz softened cream cheese small can crushed pineapple, drained 3-4 slices of a red onion, minced fine similar amount of a red pepper, minced fine any fine grated cheddar, mild to extra sharp Mix all of this together, let it sit in the fridge preferably overnight to firm up, then form a ball and roll it in crushed pecans or pistachios and serve. A good friend requests this every year at Christmas and has dubbed it the 'Crack Ball.'
