Mery Christmas happy holidays or? Wed, 12/16/09 8:27 PM (permalink)
My own private recipe. I sold these for $3 each with side of chips.  they are great sellers.

MEXICAN LASAGNA>
BASED ON EACH LB OF HAMBURGER:

1 LB GROUND BEEF
1 OZ CAN TOMATO SAUCE
1 GREED PEPPER CHOPPED
1 CUP SLICED BLACK OLIVES
1 8 OZ CAN KIDNEY BEANS
1 TOMATO CHOPPED
3/4 LB MIXED TACO CHEESE
6 IN TORTILLAS (THE THINNER THE BETTER)
1 MED ONION DICED
1 8 OZ CAN ENCHILADA SAUCE
6 TO 12 JALAPINIO SLICES CHOPPED ( DEPENDS ON TASTE)
Brown meat W/1 TSP SALT 1/4 TSP BLACK PEPPER and drain  (don't over cook)
add tomato sauce, onion and bell pepper
cook over medium heat until peppers and onions are soft stir often so as not to over cook the meat.
add beans olives jalapinios and 1/4 cup crated cheese
continue until cheese melts into mixture
pour enchilada sauce in to wide shallow bowl
submerge tortillas in enchilada sauce and line 8x12 or similar cake pan allowing the tortillas to come up the side of the pan
Put half of the mixture in the pan
add a layer of tortillas this time cut them to fit evenly over the mixture
add 1/4 cup cheese mix
add the other half of the mixture
dip tortillas in sauce and top it off tucking the over hanging tortillas behind the ones coming up the inside of the pan
top this off with the other 1/4 cup of cheese mix
pop in 350 degree oven for about 10 min or until cheese is melted
top this off with a few olive slices and the chopped tomato and put back in the oven for another 10 min or so.

I cut these in to 6 2 to 21/2 in strips try them on your football watchers this holiday, you can play with it a little but I have tried it with different mixtures for about a year and this exact recipe was the best. ENJOY!
