Chicken soup receipe with lemon juice

April 1st 1985 I took my 1st trip E of the Mississippi. Work sent me to Harrisburg, Pa for 3 months. While there I found this great diner run by an older Greek man. He and the diner were named Michael. The diner was on 2nd st in downtown close to the capitol buildings. He had 2 items on his menu I really remember. A Here's the Beef burger and this great chicken noodle soup. He showed me the receipe once, it had been printed in the local paper. Stupid me didn't know enough back then to copy it down. So do any of you have a chicken noodle or rice receipe that uses fresh lemon juice? MikeS.

MikeS, I had figured you were hoping to get someone's grandmother's recipe, but when you had had only one response, I thought you might recognize one of the online recipes as being similar to the one the old Greek man had told you. Here is another online one for a Greek Lemon Chicken that might be close. At the bottom of the recipe, it says, "Served with plain white hilopittes, a kind of sinall, flat, square noodles (quite often homemade in Greece), boiled separately, it is absolutely delicious, but is equally good with plain white rice." http://www.greek-recipe.c...ews&file=article81

If you want a soup without egg, I can highly recommend this "Portuguese Chicken Soup," which my husband makes for us a lot. It is especially comforting if you are ill, but it is wonderful anytime. Portuguese Chicken Soup Take one whole boneless/skinless chicken breast, cut into small cubes or thinly slice, as you prefer, and simmer it in 4 cups of chicken broth (canned will do; homemade is better) for about 20 minutes, or until cooked through. Separately, cook 1 cup of basmati rice in 1 cup of chicken broth and 1 cup of water, until just done, but not mushy. Add the cooked rice to the chicken and chicken broth, and adjust the seasoning. (We like to add a lot of freshly-ground black pepper.) Squeeze in the juice of 1/2 of a lemon (or more, to taste). Stir in 1/4 to 1/3 a cup of coarsely chopped fresh mint. Serve and enjoy!
