Crab Cakes---HELP

Greetings All, Making crab cakes for Mother's Day..So much going on wanted to know if I could make the cakes the night before and refrigerate overnight? Please advice, don't want screw up this special dinner.

Yes you can. Just cover them with plastic wrap, and keep them in the coldest part of the fridge.

I second "wheels in the sky" -yes, you can makre them a day ahead. Simply cover and keep cold in fridge. Should be fine. I did that once, I put them in a tupperware. I had to pile them on top of each other, and used wax paper to do that. They kept just fine. I've also done it with salmon patties.

IMO you shouldn't do it any other way, it gives all the ingredients time to bind. I make them for my Mom and BF every Christmas.
