 Fresh Pimento Peppers

We have a bumper crop of pimento peppers. Any suggestions for different ways to use them? So far, I've only cut them up in salads.

    Roast them, peel them and then use them to make sauce. Also, pulse  roasted, peeled peppers in a processor with garlic and some cubed, peeled, roasted eggplant, and a drizzle of good olive oil (and salt and pepper to taste) to make a wonderful spread.

      Don't let'em go bad. .... cut up and freeze .... use later as needed cooking or make your own pimento cheese. ect ....

        Anything that one would use a red bell pepper for would probably be suitable for your pimentos.

          Roast them and then do what any Southern Living follower would do:

          Make pimiento cheese.
