Joe, they really were so good. My local Fairway Market had them. I paid about $3 for the pack of two. I also bought another pack to store in the freezer.

Thanks for the thought Marlene.  When I have a little extra the Weber Smokey Mountain is the one I probably will get. I've looked at the Egg at a local store and it is a thing of beauty!

Where did you get the Beef ribs, they looked great, not easy to find meaty ribs.

I bought them at my local Fairway Market. They have an incredible selection of meats including the pork belly which I paid about $3 for. They also had "very trimmed" racks of beef ribs. I prefer the meatier ones.

Another great job! The ribs look really good - the pork belly thing intrigues me, though - I'm wondering are they what we call salt pork here in the south?

No, no salt, other than what I preseasoned them with. I was surprised at how cheap they were considering they are one of the "in" things with chefs. At another store I was able to get a couple of lamb shanks for about $2.50 each. Since they became popular they are often out of my budget. I remember my Mom making lamb shanks when I was a kid because they were so inexpensive!
