    A couple questions.
     
    1) For the cabbage; what is that a bag of? I couldn't understand you in the video, and I couldn't read the bag.
     
    2) At the end of part one, the text says to keep it under the charcoal grill at 375* until an internal temperature of 160*; but in part two, you say that it has an internal temperature of 200*, from the probe in the convection oven; is something missing? Did you take it off the grill and then put it in a convection oven? Or did the temperature rise after you took it out of the grill, and you used the convection oven probe to measure it? This is unclear.

          The bag was cajun holy trinity,
          I started the roast on a charcoal grill, pulled at 160 internal then finished it in the convection oven.

                hey 007 Im new to the website and I'm just starting to find out how much I enjoy cooking, surfing the website I found a lot of your recipes and they pics all look great. You seem to be a pretty knowledgeable post to follow and I just watched your Youtube video and pretty great stuff, someone needs to get you a show brother. Keep cooking

                  There's a difference between the "Trinity" and the "Holy Trinity".
                  Cajun Trinity:  Onions, bell peppers and celery, the three most often used ingredients in Cajun/Creole cooking. 
                  Holy Trinity:  The Cajun Trinity with garlic added. 
                  Mirepoix is the French name for a combination of onions, carrots, and celery.
