Having just spent two weeks in rural and urban China, I can tell you that none of the dozens of Chinese restaurants I have been to in the USA is the real deal. They are all "Americanized" and probably just as guilty as PF Changs. Ask for General Tsao's Chicken, shrimp with lobster sauce, etc. in China and you will get a very puzzled look! I will be impressed and delighted once I see hand-pulled or hand-sliced noodles at home.

Stephen Rushmore Jr. It looks like I have some eating to do when I return home. Thanks! Stephen, within 10 miles of my house in LA/OC I have a Taiwanese hand pulled/cut noodle place, stinky tofu shop and many other real places. I also have a friend who goes with us occasionally whose parents still live in Taiwan. Also lots of places with live tank with sea cucumbers etc. Come on out to LA/OC and you will think you are in China! I've got some great places to take you!
