Just pulled from the Smoker, Needs the Griddle to finish it  Needless to say, this is seriously great eats, becoming quite the rage in high end restaurants, I'm trying it out, I need to improve on it!

Yep Billy, crisp it on the grill, intense flavor, not salty like bacon, which it actually is, before curing!

I'm becoming a big fan of pork belly. I had it at The Nook in West Los Angeles where they served it as a hunk about 2 inches by 3 inches by 2 inches. It was not crispy at all and melted in your mouth. I believe it might have been braised in a sauce made with star anise which was served with it. Whatever, it was quite good. It's showing up on a lot of menus here.

Looks good!!......I did a pork belly a while back....Chinese 5 spice, roasted on a rack, pan full of water... kind of steams the under side, very tender...very crispy skin.......Mmmmmmm

Delicious...I love pork belly and have it frequently. I will cook it in some Asian manner or straight up smoked and BBQ'd. I try for a nice smoky ring on the outside. I buy mine at either the Latin or Asian markets, which makes me wonder how it is used in Mexico? mark

chewey, ... you going to drive up the price of pork bellies & briskets, .... now .... with all this pics. Walmart done raised brisket price from $1.69 to $2.69 per lb 2 weeks ago. ...  ... And, now I got several people wanting my brisket recipe !!!
