Ahhh, that accent is music to my ears. I spent several years on an offshore drilling platform in the Gulf of Mexico working with Cajuns. They're a great bunch of people, and they're the ones who caused me to be so interested in food and cooking. I went on that oil rig at age 18 weighing 180 pounds and five years later came off weighing 210 and it wasn't fat either. They work you hard and feed you well.

He got me with the "not TOO dark" roux, cuz I never have the patience to go all the way, but then he lost me with the tomatoes cuz I wouldna' ever put tomatoes in my Classic Gumbo just like I wouldna' ever put beans in my Classic Chili (but "Needs Must When The Devil Drives") , and then he got me back again with the "NO okra" cuz we don't like it 'round here neither. & I loved the way he said the restaurants do sausage & chicken cuz it's CHEAPER than seafood... and an't that the truth! Thanks for posting... yes, I could listen to this guy talk even if he was readin' from the Dictionary!
