We've covered this topic before. You should find some great information contributed on sodium hydroxide boilouts and other off-the-shelf decarbonizing products in the archives.

i get my stuff at r/d its a boiling mixture what i do is fill with water pour stuff in bring to a boil for 15 min- 1/2 hr drain and rinse thouroly...throughly.... th........(really well...lol.) with some of the really baked on stuff just above the oil line in the tank i have to use a scraper right after boiling while it's still a little soft and then a small wire brush almost like a tooth brush to get around where the makers label is stamped in the fryer.... i filter my oil every night and change every week and still gets really dirty, for the out sides i use a degreaser then some stainless steel polish it helps a little on the next cleaning.just my .02

Don't have boil out? A friend recommended lemon juice. Fill fryer with water, add about 1/2 cup lemon juice, boil about 10 minutes. This works well on breaking down the oils and makes rinsing easier.

Go to a restaurant supply store and get boil out. It works the best and follow instructions. Lemon juice is fair but not as good a s boil out. Once you get it clean , weekly cleaning will keep it clean and strain nightly.

Have you heard of a group called Filta Environmental Kitchen Solutions? They come in and maintain your fryers and micro-filter your oil which extends the life of the oil - usually reducing your oil cost enough to pay for the service. They also say that by taking on this dangerous task, insurance companies may reduce the restaurant's insurance premiums.
