As a child, 60 years ago, my Sicilian Grandmother would prick a hole in both ends of an egg just plucked from the nest and have me suck out the contents. She also made me sip homemade dandelion wine for the ajduada (Spelling? Italian for upset stomach).

    Over easy, then chopped up in grits with salt/pepper and butter. Real butter.

    Pickled in beet juice

    In a tortilla, scrambled, with refried beans, fried potatoes, bacon, cheese, salsa

    Egg salad sandwiches

    I get my eggs from a friend whose chickens really are free-range. They run around the barn and yard and eat all kinds of seeds and bugs, and those yolks are so rich they're deep orange in color. Supermarket eggs of any sort don't hold a candle to them for flavor!

      I love eggs!!! I really do!!!

      But when I was pregnant, I really hated eggs. I got ill thinking about them. That was a long time ago, for me.

      Anyone else??

        I like my eggs so fresh they are still warm. Go to the barn and get a light peck from the hen as you reach under her to get that morning's eggs. My hens free range all day eating fresh greens and occasional snake or mouse also. The yolks are so bright yellow I have to warn people we give them to or sell to to be forewarned.

        Free range eggs have almost as much omega-3 acid as salmon. The cholesterol ratio between hdl and ldl is completely reversed as opposed to cage hen eggs. Free range, true free range...not the USDA idea of it, eggs are GOOD for you. And tasty also.

            Steamed (cover-cooked) over some good hash browns (with tater, bell pepper, onion), and a side of pork sausage. Toast is needed!

            After cooking, break eggs over the hash browns, then fork a bunch of hash browns in the semi runny yoke, stab a piece of previously cut up sausage, and add to a bite of toast.

            Also, maple syrup over the top of easy over eggs added to the top pan cakes, sliced up and combined.... yummmmm.

              Homemade deviled eggs at any picnic are great. I could eat a dozen. A soft scrambled omelet with sauteed mushrooms, goat cheese, and chives is so comforting. And fried eggs on top of homemade (not from the can) corned beef hash is just heaven.

                I like em over hard and broken. I love the taste but the less I am reminded of an Embryo the better. I also love Omelets. You can keep Scrambled and Hard Boiled. Phooey

                  Only like scrambled and hard cooked. Can't stand the sight of runny yolks or whites.

                    Boiled, hard fried, sunny side up, poached. . . I LOVE eggs. But my favorite? An omelette. Three eggs, mozzarella cheese (sometimes brie), chopped tomatoes, canadian bacon (or prosciutto), green peppers, sauteed onions and garlic.

                      Scrambled with a bit of cheese and mustard.
                      I'm appalled at the thought of ketchup on eggs but others are applaeed at my preference for mustard. Go figure!

                      Fave omelets-- feta and gyro meat, cheese and sausage.

                        Beaten with some heavy cream and a splash of very cold water a bit of sea salt cooked in the best freshest butter you can find in your best non stick pan- cook slowly on low heat occasionally fold gently- really like a custard- a few snips of chives or chervil, tarragon other fine herbs- just a bit- yum- i think i 1st read that in a Julia Childs cookbook years ago -it works- slow low heat is the trick. Serve with reallygood toast- brioche , a great bialy maybe some swiss cheese- and strong coffee(Peets- Arabian Mocha Java, with steamed milk) and Heaven, I'm in heaven.... gotta go eat!

                            This thread reminded me of the egg breakfast my dad made for me when I was young, which was a soft boiled egg, mixed up in a bowl with a torn-up piece of buttered white toast. Yum! I made it once for my spouse, who loved it.
