Cheesesteak (kind of) Breakfast sandwiches !!!!!HELP!!!!!

Hi All, I'm working on a new breakfast sandwich menu for my "Pick-up and go" menu in my Cafe. I was thinking of using the Cheesesteak Amoroso roll idea. I didn't have any thin sliced steak so I just made a Mushroom onion egg scramble Melt with Cheddar and Monterey Jack cheese. The sandwich was good but I wanted more flavor, I think it needed green peppers for more taste and color. This sandwich defiantly needs more color. The question to all you Roadfood members is, what have you seen on your travels that may be a good idea for other egg scramble melt hoagies. I was thinking a Spanish Chorizo scramble with sauteed onions, green peppers, with melted Jalapeno Jack cheese...................these are a few pictures of what the first trial sandwich looked like........................Thanks..............Bill Mushrooms and onions sauteing in a bit of olive oil Mushroom and onion egg scramble finished product put into a crisp Amoroso roll with melted Cheddar and Jack chese I really got this idea years ago from some friends that owned an Italian Pizza restaurant. They would always ask me if I wanted a Egg and pepper grinder, whenever I said yes, I didn't regret it....................
