 Baked Rainbow Trout

My husband mentioned he was in the mood for baked stuffed fish so off I went to my local fish store to see what looked good. I found these two beauties and decided they were just the ticket!

 
I made a seafood stuffing with shrimp, scallops and crabmeat. I sauted onion, celery, garlic and red pepper in a little olive oil and unsalted butter. I added fresh parsley and thyme and a splash of white wine. As a binder, about half a sleeve of Ritz crackers, crushed.

 
I sprinkled the fish inside and out with lemon juice, salt and pepper. I made more stuffing than I probably needed but managed to stuff it all in! I topped the fish with a little softened butter and baked them at 375 degrees about 30 minutes.


They came out wonderfully! so good!

        Agnes, those fish are beautiful and I think they need to be on my dinner menu at some point.

                  A question: Did you bake them covered or, uncovered?

                  I started them out loosely covered with foil and then removed it for the last ten minutes or so.

                    I don't like scallops, but other than that, congratulations, because those are MASTERPIECES!  I'm a rainbow trout fan, too.  What a to-die-for dish!

                                      As a matter of fact I have the same idea. I am going to make more just to eat by itself! Maybe with a salad on the side.
