 How to make Cheese Dip?

I am an American who lives in China and have lived here for about 10 years now.
There are two food items that I love that I just love that I cannot find here. One and more important is cheese dip. Just the jar of the stuff one would find in a junk food aisle in any typical American store.
I cannot find this product anywhere, even in Shanghai, where a lot of western items can be purchased (for example, I have to go to Shanghai for FRITOES).
I do not have Velveeta. This seems to be a key ingredient. I do and can have access to other kinds of cheeses. I think I have a crock pot, but I have never used it (I have a Chinese wife and it is used for Chinese cooking). Is a crock pot necessary, or could I use a pot? Help!
The other thing I cannot get here are sweet pickles. Korean people love sweet pickles, but I cannot get them here. I do buy dills, but I want the sweet! I have procured a stray jar in the past here and there, but it is almost impossible to find. I went to Hong Kong last year and got two jars of cheese dip and two jars of pickles, and wished I had two cases shipped home.

        I don't know what the status of cukecumbers are in China, but have you given any thought to canning your own sweet pickles? It's very easy to do and much better then any store bought brand such as Mount Olive.
        Regarding the cheese sauce. Have you considered a foodservice grade nacho cheese powder? That shouldn't be a problem importing and doesn't weigh more then a pound per pouch. This stuff is great and very inexpensive. It can be augumented with diced green chilis, onion and garlic powder, and msg to make a great nacho cheese dip product.
