Is anyone making pickled eggs for Easter?
My mother(age 89) remembers her mother making pickled eggs for Easter as long as she can remember. I also, always make them for Easter.
My basic recipe :
1 C water
3/4 C cider vinegar
3/4 C sugar, I use splenda instead of sugar with great results.
1 t salt
1/2 t pepper
2- 14 oz small whole beets
6-8 peeled hard boiled eggs
Bring 1st 4 ingredients to boil, stir to dissolve salt. Remove from heat, let sit 5 minutes. Add both cans of beets with liquid. Refrigerate overnight, add eggs. I try to let them stay in the pickled beets at least 3 days, but it is hard to keep my husband out of the eggs.
