While I am not on a low carb diet, I do try to limit carbs and watch calories as a whole. One thing my wife and I enjoy is a version of the cheesecake on the back of some Knox gelatin packages. I do not have it in front of me, but it is something like this. I may be off on the water and Splenda measurements. I have also added fruit, peanut butter, chocolate, or almost any other flavoring you like instead of or along with the vanilla. 2 packages Cream Cheese (I substitute Fat Free) 1 pack gelatin 1/2 cup boiling water 1 tsp vanilla 1/2 cup sugar (I substitute Splenda) Beat the Cream Cheese and Splenda together until fluffy. Mix the gelatin in the boiling water and add to cream cheese. Add Vanilla and beat until thoroughly mixed. Pour into a prepared crust (I just crush pecans and place on the bottom of a pie plate). Refrigerate.

Jerky is with out a doubt one of the better snacks for low carb diets. Just be carefull, most brands are very high in sodium and contain lots of sugar (helps the jerky weigh more)!
