Smoked Corned Beef Hash

1 Smoker bag, (I used Hickory)
2-3 lbs of raw corned beef
(EDIT: I also use an Un-corned Beef Brisket to make a Roast Beef Hash)
Preheat oven to 500 degrees F.
Drain the corned beef, if it has a spice packet rub the spices on to the corned beef.
Place in smoker bag, reduce oven to 350 degrees F and roast for 2-3 hours depending on size. (1 hour per pound).
Remove from oven and leave in the Smoker bag, sealed, place on a plate and place in the fridge for several hours.
Remove and slice…this corned beef will have a wonderful smokey flavor.
You can serve cold or heated, in sandwiches or as an entree.
************************************ The Best Corned Beef Hash EVER?? INGREDIENTS
2-3 Tbsp Olive Oil
1 ½ C. Diced Smoked Corn Beef
½ C Diced Red Pepper
4 Green Onions Chopped
1# Sweet Potatoes
1# Red or White Skinned Potatoes
½# Sliced Fresh Asparagus- 1 “ slices (Optional to my thinking!)
Heat olive oil in a large skillet
Slice cooked potatoes, peel and slice sweet potatoes.
Add red pepper, green onions, and asparagus to the heated skillet; cook until almost tender.
Add Corned Beef
Add potatoes to the skillet. Stir to mix all ingredients together.
Sprinkle a little crushed red pepper for a bit of heat if desired.
Place a lid on the skillet and let it cook about 10 minutes. Stir around and turn over, replace lid and allow to cook about 10 more minutes until corned beef and potatoes are heated through with some crunchy parts on the potatoes.
If desired, break eggs over the top and replace lid, continue cooking until eggs are cooked to your liking.
