A cut of the 'chuck' .... The price should not be a lot more than the price of a chuck. The steak still needs to be tenderized.

Tyson Foods give this description: [class="quote"]This steak is cut from the underblade portion of the beef chuck roll. It's official URMIS name would be Beef Chuck Underblade Center Cut Boneless. It is cut from the serratus ventralis which is a very highly marbled muscle, and is of adequate tenderness. name withheld Research and Development Tyson Foods, Inc. 2210 W. Oaklawn Springdale, AR 72762

edwmax A cut of the 'chuck' .... The price should not be a lot more than the price of a chuck. The steak still needs to be tenderized. edwmax - Your link shows there is a lot of knife-work involved to create the Denver steak from a chuck primal. That cost will be reflected in the pricing, as well as the fact that one does not have to buy the less desireable parts of the chuck with the Denver. Jim

Looks like a delicious, "flatiron" steak to me.

I marinated it in worchestershierere sauce, a little Peter Lugars sauce, garlic, lemon juice, pepper & a couple other things I don't remember. grilled them as usual & started to eat like a steak, but the flavor of the marinade & the tenderness of the steak made me cut them up & eat the rest as fajitas. I bought them because I've never seen that cut before, they were cheap & going out of date & looked good in the package. I'd buy them again for steak fajitas.
