I receive emails from "Mr. Food" and thought I'd try this particular recipe. It begins by stating: Mr. Food and our TV production team went nuts over this recipe when they visited a restaurant in the Mississippi Delta. They thought it was one of the best fish recipes they had.
I have to agree, it's addicting. Rich but addicting. These flavors just really work. And I know you're not supposed to tamper with recipes....
1c grated parmesan( I used 2/3)
1/2c mayo
1/2 stick butter, room temp ( I used 1 stick butter, call me Paula)
3 scallions, sliced
1/2t worcestershire sauce
1/2t hot sauce
4, 6oz U.S. farm raised catfish fillets
Preheat oven to 350, coat a rimmed baking sheet with cooking spray
In a medium bowl, mix all ingredients except catfish, mix well
Place fish on prepared baking sheet, spread mixture evenly over fish
Bake 20 - 25 minutes or until fish is golden and flakes easily with a fork, serve immediately.
I actually put mine under the broiler for a short time. Served this with a fresh salad.
