What software did you use to do your layout? I need to get a layout done for the HD and for my trailer builder so I can get an idea of costs involved.

I used an old architect's scale. I like to lay things out in 1/4" and 1/2" scale. My drafting board (portable) was in storage. You might want to try Google Sketchup.

See my thread for sketchup pics, took me about a week to get a hang of it, after that, it got easy. Many commercial kitchen objects are already modeled and can be downloaded, they're easy to re-size too. It's really helpful to have a 3D perspective, I would suggest Sketchup in a heartbeat.
