Cooking Oils

Do you use different oils for different things when cooking? I used to use peanut oil for Chinese cooking, corn oil or lard for Mexican cooking, Oil Oil for Italian and a lot of other cooking dishes but now it's just vegetable oil and olive oil. I have a few different olive oils, one specifically for dippping and the others for cooking. My cupboard space is more important than being oil specific.

Peanut Oil for Deep Fried Turkey and Fried Chicken and French Fries, Vegetable Oil for most general frying Light Olive Oil for salads and cooking eggs Lard for my hot dog chili sauce recipe 10W-30 Motor Oil for everything else!

Nope. I use mostly Olive or Vegetable oil for everything. I used to use shortening. I never use lard.
