Does anybody know of any restrictions in Maine about using an electric stove in a food trailer?  I was told I would need a fire surp. system, but there is no open fire??

    Sorry, but it doesn't matter what anyone on RF knows or thinks they know you need to check with which ever department is in charge of that sort of thing. Like the local fire department inspector, health department or whom ever.
     
    If you just get some advice from here or a friend that used to work in a kitchen it may be right, wrong or half right, ether way your still going to have to deal with the local authority sooner or later.
     
    We currently have some new build/start up members that are going through rebuilds because they got bad advice, don't let that happen to you.
     
    You may be able to find the local rules on line but I'd caution you some times they are very hard to understand and are always open to the inspectors interpretation. So what you read and understand may not be the way they interpret the same city, county, or state code.
     
    I know that sucks but it's the way the food business works.

        One: Who told you that you needed a Fire Surp System?    Fire Marshall or the HD?   They are the ones that would know.   .... Get a copy the the Maine HD Codes & find out.
         
        Two: Even if the system wasn't required, wouldn't you want a way to put out a GREASE FIRE (open flames here) before damaging the kitchen equipment; or endangering your employees & customers?
         
        Three: Some places don't require the Fire Surp System;  just manual fire extinguisher be on hand.    But, your Insurance carrier may have a lot to say about which you will use too.

          I was told this by the Fire Inspector, as for looking at the codes it states you only need a surpres. system for an open flame.  I'm not worried about a grease fire, this is only a hot dog trailer and I'm using a steamer.  I just want to heat the dogs in hot water before putting them in the steamer
