Heading To Lubbock From Austin Texas

Got a cooking gig in Lubbock this week. Heading out from Austin and looking to eat some barbecue and Tex Mex. Hoping to get brisket, hot guts sausage and scratch tortillas.
Any Lubbock roadfooders on here? Looking forward to all the suggestions.
