New Orleans to Memphis via Birmingham

We're planning a road trip. I don't need New Orleans, Birmingham or Memphis recommendations, as those are easy to research. But if anyone knows of any great roadfood in the small towns along I-59 between New Orleans and Birmingham or on Route 78 between Birmingham and Memphis, I'd be happy to hear about them. We especially like fried chicken and beef BBQ, though I know pork reigns supreme in this region. Thanks.
