Road trip - with strange but necesary nightly stops - please help with food

We have to make it from SoCal to suburban Minneapolis as fast as we can, with a more leisurely trip home. It's a strange trip. Please help.
 
Cedar City/Parowan Utah, hopefully more Parowan than Cedar City. but we'll take what there is anywhere.
 
Georgetown, Co, or anything inthe vicinity. We are also kicking around a driving marathon to get us east of Denver, so anything EOD would be appreciated.

On the way home:
 
Rapid City, SD
 
Laramie, WY
 
Northern UT is OK. [Maddox! Island Isle!]
 
St. George is sort of covered, but...yikes, so many chains.

And yes, I searched. I truly did. [Can y'all tell that I've been hit by the "SEARCH" Monster before?]  I did. Tell ya what, several mentioned restaurants on our route to and from are now closed. So please help us. Thank you.
