The Tex-Mex Cookbook, by Rob Walsh is great. Not only a cookbook but a history lesson as well.

Stacked enchiladas are a memory, but the best taste of Tex-Mex food I've had was a sort of spoon bread made with blue corn masa and cheese.
 
I think there was both cream cheese and jack cheese.  I have a recipe for it around here... somewhere.

Yeah I have that book and it's great. Don't really see stacked enchiladas here around San Antonio, the home of TexMex.But here, we don't need a special day, we celebrate all year round.

Stacked enchiladas are common in Santa Fe. I saw them on a menu once at a Mexican place in DeKalb Illinois and ordered them thinking something similar to a Santa Fe stacked enchilada. WRONG. It was one flat enchiladas and a big pile of lettuce and yellow cheese. After I scraped off the ton of lettuce, it was pretty pathetic.

Sounds like I should make myself some slap tacos.
