Cheese Fondue falls in an out of popularity frequently, but I've always loved Cheese fondue! We have it frequently. The secret to a good Fondue is using QUALITY Cheese! Let's hear about your favorite place for fondue or a favorite recipe My Bride has a good recipe: Grammy's Alpine Cheese Fondue Ingredients: 1 clove of Garlic cut in half 1/2 Lb Shredded, NATURAL Swiss Cheese 1/2 Lb Shredded Gruyere Cheese 3 TBSP Flour 1/8 tsp Salt Dash of Pepper Dash of Nutmeg 2 Cups Dry, White Wine (Neuchatel, Rhine or Chablis) 2 TBSP Kirsch or Cognac 1 TBSP Lemon Juice (Optional) Cubed French Bread Directions: Rub inside surface of Ceramic fondue pot with Garlic and discard. Toss Cheeses with flour is a separate bowl. Pour wine into the fondue pot and set over low flame. When small bubbles show on the bottom and sides of the pot, stir in Lemon Juice and begin to add small handfuls of Cheese, stirring constantly with a wooden spoon until all cheese is added and melted. Stir in spices and Kirsch or Cognac. When blended serve with French Bread Cubes Makes 6-8 Dinner servings.
