AA cater truck steam table qustion

I've been refurbing a AA cater truck... After getting everything done and checking the gs items, the steam table will only get to 75 deg. there is a dial on it to raise the temp but that doesn't do anything.. Anyone messed with these? I hate to by something I don't need... Rick

There should be a baffle you can open on the burner that will allow more air to mix with the gas and create larger flames.

I checked that last night and its wide open, tried blocking some of the air and that dint do anything.. I think its in the temperature cotrol but cannot find anyone that knows anything about it..

So, the thermostat automatically shuts off the gas? Or how does that work? How tall are your flames? How far away is the burner from the bottom of the steam table?

flames only out about 3/4" inch.. burner is about 2 inchs away.. I finally got ahold of someone at AA cater to talk to... He's pretty sure it needs a thermostat...
