Just bought my first cart and am ready to open up. I am sure i will learn as I go but what are some practical tips?
 
For instance how long can I leave the dog in the steamer/boiler?
If customers want them grilled should i use high heat for quick turnover or low heat?
 
Can I stream the buns while still in the bag?

    Can I put food dye in the relish to brighten it up?

      If you put food dye in the relish, the health department maybe putting a citation into your hands.
