You mentioned Hopkins Boarding House. Unfortunately, it's no longer in operation.
BUT the Coffee Cup, McGuires Irish Pub, Seville Quarter, Pegleg Petes, Joe Patti's and the FloraBama are!
And don't forget the Naval Aviation Museum on the Pensacola Naval Air Base. It's Magnificant! They Have EVERY plane the Navy has ever flown on display.
It's also the Home Base of The Blue Angels and if you're there at the right time you can watch them Practice.

The Coffee Cup.
Great Omelets, Biscuits & Gravy and Nassau Grits! And don't forget to buy a "No Grits, No Glory" Tee Shirt!
McGuire's Irish Pub is a Must see & Eat place. The Senate Bean Soup is still 18 CENTS! Great Steaks and Fun.
The evenings are a lot of fun and don't forget to "Kiss The Moose"!
They also have a place in Destin which is good too, but it doesn't have the VIBE of the original in P'Cola!
Seville Quarter is a NOLA style Entertainment Complex with Good Seafood and Cajun Bar Food! Oysters, Gumbo, BBQ Shrimp, Po' Boys, etc.
Pegleg Pete's Oyster Bar on P'Cola Beach has the best deal on Raw & Steamed Oysters - $7.99 a Doz!!!
Joe Patti's
The Finest, Freshest Seafood Market in the Universe! Wanna have a picnic on the beach? Go to Joe's and get them to steam some seafood for you or visit their Sushi Bar Cafe or Amangiari's Deli & Specialty Food Market there for Take out!.
And then there's the Flora-Bama Lounge!
Home of the Annual Interstate Mullet Toss.
Beach Bar, Bands, Beer, Booze & Bikinis!
It's been a while since I lived in P'cola so not too familiar with the Ft. Walton, Destin, Sandestin Scene anymore but all these places in the P'cola area are kickin"!
Anywhere you go in the Redneck Riviera in the Summer you're gonna have a good time!
