New England seafood restaurant style ONION RINGS

Nearly every decent seafood restaurant in New England sells onion rings, and they're almost all great. But I've found wherever else I go, I rarely come across anything that's not a heavy beer batter or a dark browned italian crust. Why doesn't anyone sell the thin flakey NE style ones? Currently searching for places with thin flakey rings in NYC or SF.
