What if I filled a pork loin full of home made apple sauce? I assume you all have figured out I'm looking for something for a BBQ contest coming up in two weeks. LOL

Is the competition broken up into catagories? I usually stuff pork the Italian way...and I bet there's no catagory for that.

My first inclination would be to butterfly and roll, it gives you the layered effect. For apple, I'd probably not use a commercial canned sauce, but a home made cooked chunky very thick sauce, and just par cooked so the apples finish in the roast. Sort of like a strudel, but savory.

Can you use booze and make an spirited apple raisin filling that is marinated and/or used for a sauce? Something like a hard cider edge to it....sounds BBQ.

This is for the open division so we can do anything. Any meat, fruit, veg, anything. Just as long as it's really good and grabs the attention of the judges. But I have to run the stand so it needs to be simple.
