Ralph Melton Chris Ayers and I sampled brains and eggs on the 2011 Glee Club trip. I didn't much care for the flavor myself. I believe that was in Raleigh and I was there and I almost gagged watching your order arrive. Some like it and some don't and I am among the latter. B & E used to be a weekend breakfast for us in SoCal back in my 'youth' Mother did them quite well. Since all the health issues and our relocation to Indiana, we have found them as 'Fair Food' at many of the county fairs and festivals in the Southeern part of the Hoosier State. I don't know (don't recall enough to compare) how Hog brains compare to beef brains...but I have tried the brain sandwiches a couple of times at local fairs and don't much care for them.

MellowRoast This very well could be the grossest thread on the site. I'll call my dad tonight and get his pan fried balls recipe. They're delicious. He also scored a big bull coon last winter and braised it with a mess of sweet potatoes.

Mountain oysters, calf fries -- whatever you call them -- are great, and while I prefer my 'coon roasted or fried I'd eat it braised.

Here's a local sausage company in La Crosse that has won a gold medal in Germany for their headcheese, also for their Jellied Beef Loaf, which does look that appealing either. But it too has been around forever. http://bakalarssausage.com/index.htm

I offered my neighbor tongue and eggs. He wouldn't eat the tongue because it came out of a cow's mouth. He just had the eggs.

Like that old episode of All In The Family where Edith proffers Archie a plate of cow's tongue "I'm not eating anything that came out of a cow's mouth. Now get in there and make me some eggs! I think that after some of the stuff I've eaten overseas, brains and eggs just don't seem all that alien to me.
