Enclosed hot dog trailer

I have two hot dog carts and want to buy an enclosed trailer. Anybody work out of an enclosed trailer? Is a 6'X10' too small for two people or would a 7'X12' be better? CCI and CMS back east look like very nice trailers but they are expensive! Also most enclosed trailers are not set up to work, the sinks take up too much room and not enough room for equipment. My ideal set up would be one side wall with propane36' flat griddle, two eyeball burner, three well gas steam table, the rest of the wall to fit in the four sinks. Any feedback? Thanks
