Sauerkraut?

Thinking the Nazi's took over the Swiss, maybe they caught on to their cheese.
Seemed like something to have handy. Could go good with peppers and onions.Also will have Mozz and Cheez Whiz.
BTW, I'm half German. Meaningless to me. I consider my self an Earthling, and leave it at that.

Growing up here...our ethnicity is drilled on a daily basis.

It's our strong foudation. Like BBQ...grits...and biscuits.

As you know, I'm not a native. I come from CA which is a melting pot. I don't have an accent, I'm not a Yankee, I'm not Granola, I have no ethnic pride, cuz what am I ? Just a white boy, and take no pride in that. Can't figger where I fit in. Too young for Medicare, too old for women to care.
 
But, I've researched my recipes and serve an awesome Dawg. Just gotta get these folks to pass the word on.

OK, Oktoberfest 2012. In Martinsville, VA........
Can't say how it totally went, cuz for 5 hours straight I was face down on steam tables and face up on hungry eyes.
 The German Guy was expensive, yet had a long line, which sent people to me.
Sauerkraut? .....Sold the one pound bag that cost me $1.69 with just a touch leftover for me to taste it. Sold out of Nathan's and soda. Cleaned out my chili and slaw, so no leftover there.No leftover cooked dogs.
Maybe my best net day since I got my Brats for a quarter a piece.
 Kinda learned my limit as to how much I can serve in a day, or an hour.
I round out my prices and include tax in it so money handleing is not an issue.
Had many comments about how I should have some help, as they see me juggleing so many things. I take pride in that, I'm a true artist! My drip pan only barely ran outta water once.
There's no room for another body. What I need is a twenty minute break in it to sit down and take a smoke and rest my feet.
So, all in all, I can't complain.
What did I learn?.......Get better shoes, eat better breakfast, bring more soda(meant to)......and thats about it.

Which is why I didn't do last year. Got burned on a high fee earlier. Went there last year, nasty weather. Didn't regret  not setting up.
Weather held up today, but had a few gusts that blew my Apple Wood  in foil thing all over. Plus so busy my cart looked like crap cuz I couldn't clean.
No way I need help. I can knock them out!!

JCheese I am curious what the DPH number is? in Max situations I always have the wife with me to handle cash and give me a break during the slow moments, so I have never looked at what my DPH might be if I did a gig like that by myself.
 
Did you sell a bunch of Sodas without a dog purchase? In long line situations I have seen that to be the case.

I see that most dog carts are only made for one person at a time to operate. so I guess it's hard to get help. unless you do like a serving line or something. like the main person just buns dogs. then another person condiments and sells the chips and drinks and takes money. I see on the internet a lot do this. they have tables around thier carts. thats what I might do also. then I just steam dogs and buns and handle those. this would be good for fairs and events too.

The people at the event just want their food as fast as possible, I'm not sure they viewed it as you being an artist. This comment s/b a red flag to get people served faster. If what you say is true, and there is only room for one person, then its time to move outside the cart. You could have someone taking orders and money walking up and down the line. They could give them a slip with the order and take the money. This would free you up to serve the dogs/sausages faster and keep the cart clean. I would also set up a condiment table, this would also get people past you and away from the cart.  .............I wish you the best.....pnwc

This comment comes up as I'm loading more dogs on the grill, in the dirty water or steamer. Or refilling onions or slaw or "pre-warming chili.
I do this between customers and explain" I'm a one-man band, please be patient"
Another person, for me, would be pointless.
Open a pack of dogs, throw them in.
Take onions out of cooler, put in serving device.
Wipe off lids of steam pans if something drips on them.
Sweep the floor, wipe my brow.
I feed them fast....they just don't order fast.
I have signs saying what I have.
Seventy-five per-cent want an "All the the Way" dog.
In SWVA, it's mustard, onions, chili, slaw. That's six things that need to be assembled ASAP, and I'm good at it.
They all know that!!
Yet they say " Ok...........I want chili...............uh, yea, .....maybe onions"
I say "You want mustard?"...cuz that should go first.
"Yeah, mustard"
"Oh, you got slaw!!, Put that on, too" Look, bitch!!!  That's All the Way!!
WTF! I got a freakin' sign saying what I got, and what "All the Way " is. And then they order the second dog almost the same way. And then ask how much it costs and complain about it. Like they can't read. As the good paying customers stand longer in line.
I'm thinking these ways, but am very pleasant. WTF...I still get their money.

I've never liked Sauerkraut? I even tried it at a ladies' home who still speaks broken English. She's straight from Germany. I tried it at Oktoberfest. I didn't like it either.
Recently I said to myself. Self, you know some folks are going to want sauerkraut off of your cart. This is while I was having the pizza combo special at Sam's club. I grabbed a bag of the kruat that they have sitting on their condiments table. It's the only kraut I've ever tried and thought it was pretty good.
 
They sold me 30 bags to try. I think it will last 10,000 years in those little bags. It taste good and it sells for $16 plus for 100 bags to a box. Try it. I think you guys will be surprised. No cans, no muss no fuss. Almost too good to be true. You get it from the deli. It is not out in the store. When I can afford it, they have many good deals at the deli that they sell to vendors, but you need to buy in bulk. She just sold me 30 bags to try.

...   ...    it is easy to make!    ... and once you know how, how much sour or sweet can be easily varied.

Like I said, I've tried kraut many different times from several sources and really never cared for it. The small bags are a generous serving on a hot dog. I can't believe I actually enjoyed it on a slice of pizza. The best part is I'm sure that it last a very long time. Comes in a box of 100 for between $16-$17 in Grand Junction Co. at Sam's Deli.

I'm so very sorry to say this and I might be out of line but Bp I everytime I log in I see very interesting posts by people wanting to improve on their business.  They ask questions and for the most part it is our obligation to answer them as best as we can.  That is when it comes to your posts.  I've found that probably 1 out of 5 posts of yours may be helpful at times. The rest of your posts are what I think to be useless sayings and quotes that usually do not make much sense. I've tried hard to withhold saying this but you have to realize that some of your posts might confuse someone trying to interpret what you're saying.  All I'm asking is please try to consider this when you're typing a response.  Thank You.   DD
