Diamond Plate Flooring - Aluminum vs. Stainless

I am planning the materials list for a food truck build, and am wondering if the extra cost of stainless steel for the Diamond Plate over aluminum would provide any benefits. The truck will primarily cook deep fried foods.
Would also be interested in what thickness others have found to be adeqate.
