Anyone tried an evaporative cooler for a food truck?  Looks tempting...

At least here in Southern Idaho we run 20-30% humidity except when it rains twice a year.

I think it's a great idea. Since it uses outside air you don't have to worry about it getting greasy. I like the solar option, too.

But now you have to carry extra 15 gals of water just for the cooler.

Agreed.  After further research I found it uses around a gallon an hour during the hot days.  I don't have room for a larger tank unless I change my floor layout and run water lines to the roof, its a little late for that.

There are some reviews on RV forums.  Apparently it works as good or a little better than a 15k AC unit on way less power.  Cost is around the same as an AC unit.  If water is not a concern, you live in a dry area and you are short on power it could be a viable option.

if think the HD would question the mold or build up that grown on the exterior cooler mats, plans to use a sterilizer in the cooler water?

There's a local Truck that is installing one, I'll find out how it turned out.

Evaporative or swamp cooler is a great choice, if you have enough water store in your RV. But, if you have any scarcity of water then definitely go with ductless mini-splits as it would take limited space and are easy to install. Though it's always beneficial that we contact some technicians, like amtekair, as they provide us the information needed to select the proper AC system that will best fit our needs.

We have swamp coolers on Houses down here but I've never seen one on a MOBILE RV or Food Truck.
They have them on Permanently Placed Mobile homes  but not mobile units.
I would think they would be too much hassle on a Food truck and with less than sturdy roofs, they could work loose and cause damage and leaks.
Much simpler to just install an A/C unit and not be bothered.

I have one installed in my 8x13 concession trailer, I connected it to a outside water tank and a 12volt water pump with a 10 gallon tank. I would run all day but even here in Colorado with humidity in the single digits it didn't help at all - we ran it last summer as just an exhaust fan and I will be taking it out and putting in a larger exhaust fan just to remove the heat.
