I want to sell cheesesteaks off my dog cart. I'm thinking of grilling the sliced sirloin and keeping it hot in an au jus bath. Grill is not big enough or hot enough to cook-to-order. Placing a 1/4lb meat w/sharp provolone and grilled peppers n onions on a beautiful 7" crusty roll made by local bakery. Any suggestions on a retail price?
