 Separating Italian Ice sales at concession stand

I have been hired to run the concession stand at our local softball fields and they have given me permission to sell my Italian Ice but I have to keep those sales separate from everything else sold at the stand. Any ideas on an easy way to do this considering I will have young kids as helpers and I won't always be there? I considered having them just "pay" for any Italian Ice sold right after they take payment from the customer but this might be too complicated when there are large orders and it's busy.

    You might have a running tally of Italian Ice sales and then do a cash out of the overall funds at closing.
     
    Working with volunteers and younger kids there is not going to be an easy way to do this unless you run two cash boxes.
