 Grilled Cheese and Potato Sandwich

The night before bake some large potatoes at 475 for 45 minutes. Remove and refrigerate. Next day slice potatoes into 3/8th s to 1/2 inch discs. Saute two per sandwich until golden brown each side. Place two on each sandwich top with cheese and grilled jalapenos. Salt to taste and make grilled cheese as normal. I think you will find this a great variation. The three teenagers I just made them for thought they were great....Russ

    I like to slip some prosciutto between the slices of cheese. My grandson's favorite was when I'd put some sliced Boar's Head Cajun Style turkey between the cheese slices.

      I add thick slabs of summer tomatoes.......at that point I could almost do without the cheese.

              Cooked bacon & sharp cheddar
              Length-wise sliced hot dogs and mild cheddar.
              Crunchy peanut butter & American cheese.
              Shaved ham & Swiss cheese.

                  Love the inspiration for this sandwich! I’m loving all the grilled cheese recipe. What type of bread do you suggest is best?

                      That sounds great. I usually add jalapeno mustard and tomato slices, on potato bread. I like extra sharp cheddar on it, and if I have it in the fridge, a slice of roasted garlic cheddar for a little extra flavor.

                        Try making pizza-flavored grilled cheese: Italian bread, mozzarella, some Italian seasoning, coarse grind garlic powder, thinly-sliced tomato. You could also add cooked sausage or other meat. I usually start with some of the cheese and end with cheese when layering the sandwich. This is so easy and so good!

                            i've been putting mustard in between the slices of cheese since i was a teenager - long before good eats was around!

                            i usually mix in some good thinly sliced imported ham.  or some turkey.  or bacon & tomato or just one or the other.  and i usually mix a few different types of cheese - mozz, cheddar, american - cooper sharp, provolone, cheddar - swiss, american, provolone. 

                            my fav bread to use is rye although pumpernickel, sourdough or hallah are also good.
