Grilled Cheese and Potato Sandwich
The night before bake some large potatoes at 475 for 45 minutes. Remove and refrigerate. Next day slice potatoes into 3/8th s to 1/2 inch discs. Saute two per sandwich until golden brown each side. Place two on each sandwich top with cheese and grilled jalapenos. Salt to taste and make grilled cheese as normal. I think you will find this a great variation.
