I consulted for a pharma co. in Lafayette, LA for five years and later became a miniority owner.  I spent some time there and enjoyed boudin at many places as well as many other cajun delights.  One of my favorite places was a local place call T. Coons.  Very Cajun and local.  Rabbit on Monday's?   never tried it.
