 Unbelievable carving knife

Had dinner at the Brazilian "Churrascaria Plataforma" in Manhattan this past weekend (again! I'm hooked on the place!). Brought my dad this time, and he is STILL talking about the knives that the waiters use to slice the assorted meats off the skewers and onto the plates. I have to say, I was quite impressed myself.
Would love to get my dad a similar knife as a gift. Not just your run of the mill carver that you can get in any random kitchen store or chef's catalog, but something that will blow his mind, a knife that you could slice through a tree with.
Any suggestions?

    You might try calling the restaurant when they are not busy and asking where they got their knives. Maybe a restaurant supply in NY can be a good source too.

            My favorite knife is a Black&Decker. It would be difficult to drag an extension cord around to all the tables, though.
