How to cook a lobster (crabs too)
Thu, 05/27/04 4:20 PM
This talk of lobster rolls brings up one of my favorite tricks in the kitchen...
I was an intern at the New England Aquarium in Boston and learned from another intern that they were doing research on the most humane way to kill a lobster...
Don't know if their findings were ever published but I've been doing this ever since and it is certainly less painful for the cooker and apparently less painful for the cookee.
Lobster fall asleep in lukewarm fresh water! Okay, you could say they suffocate, but they don't writhe around in agony like when you drop them in boiling.
So, fill up your pot with lukewarm water from the tap. If you are especially concerned about their suffering you can put a piece of metal mesh, like a spatter guard, on the bottom of the pot so their little toes don't get burned.
