 Left over shrimp

I have about two pounds of shrimp left over from a shrimp boil last night and need some ideas of what to do with it. It is very spicy, and other than a salad, I am coming up blank.

Lisa? Grampy? Anyone?

    I would heat them through in marinara sauce and serve over pasta or maybe make a gumbo and throw the shrimp in last just to heat through.
    What about shrimp tacos?

      My first choice would be shrimp Newburgh served over rice or toast triangles. If I'm in a hurry, I really like the Knorr brand Newburgh sauce mix and add a little sherry to it. That's what I'd want to make but our house would probably be invaded by the usual horde of hungry teens so I'd slice up the shrimp and make this:

      PARTY SHRIMP SPREAD

      2 (8 oz.) pkg. softened cream cheese
      1 cup cocktail sauce
      1 ½ cup cooked baby shrimp
      1/3 cup chopped green onions
      1/3 cup chopped green pepper
      1/3 cup sliced ripe olives
      1/3 cup diced fresh tomatoes, drained
      1/ 2 cup freshly grated Parmesan cheese

      On a pizza pan or large, flat round tray, spread the cream cheese evenly. Spread the cocktail sauce on top. Sprinkle the shrimp, green onions, green pepper, olives and tomatoes onto the cocktail sauce. Distribute the Parmesan cheese evenly over all the other ingredients so it looks like a pizza. Cover and chill until serving time. Serve as a spread with crackers.

        I know it is not exactly soup season in most of the country right now, but I have used this recipe with some success in the past, and I usually make it a little spicier than the recipe states. I would imagine your spicy shrimp would go nicely.

        Shrimp Bisque

        Amount Measure Ingredient -- Preparation Method
        -------- ------------ --------------------------------
        3 pounds shrimp -- with shells and head
        2 medium onion
        1 bunch celery
        3 medium green pepper
        2 cloves garlic
        1/4 cup green onion -- green part
        1 tablespoon parsley -- minced
        1/4 pound butter
        1 cup flour
        1 tablespoon paprika
        1 tablespoon Creole seasoning
        1 tablespoon Worcestershire sauce
        1 pint half and half

        Peel, head, shell and devein shrimp, reserving shells and heads. Wash and
        prepare all vegetables, reserving all peels, trimming, and such, including
        white parts of green onion. Add all reserved scraps (shrimp and
        vegetables) to 1/2 gallon cold water and bring to a slow boil over
        medium-high heat. Simmer for 20 minutes; strain and reserve liquid.
        Finely mince shrimp, onion, celery, green pepper and garlic. Melt butter
        in 4-quart soup then add minced vegetables (except green onions) and
        shrimp. Saute until shrimp are pink. Add flour, reduce heat and stir for
        about 5 minutes
        Add reserved shrimp stock and remaining ingredients, except green onion and
        half and half. Cook over medium heat 30 minutes, then add green onions and
        half and half. Adjust seasoning and change consistency with more half and
        half if desired.

        Best of luck -- and save me a cup!

          Left-over shrimp is not a concept with which I am familiar.

          How about steaming then for a short time to warm them and making shrimp po-boys?

            Make potted shrimp.

            your peeled shrimp, minced
            1 stick (1/2 cup) unsalted butter, nice and soft
            1 tablespoon medium-dry sherry or more to taste
            1 teaspoon finely grated fresh lemon zest
            1 teaspoon fresh lemon juice
            1 teaspoon minced shallot
            pinch of ground mace
            salt and pepper
            Pinch of cayenne

            mix well with wooden spoon. pack into ramekins or some such. let sit for a day or two, if possible. (it really will taste better) eat with crackers, flatbread, ak-mak, etc. feel like british nobility.

                Those all sound so good! I may have to go out and buy some more to make them all!

                The concept of leftover shrimp is a novelty to me too - that's why I needed help!

                Out house has switched into full summertime mode and our house is either full of teenagers, or they have all scattered to the winds like last night.

                  If you like Chinese food, make a Szechuan-style shrimp dish, by stir-frying your favorite frozen mix of oriental vegetables and adding soy sauce and the shrimp, and then serving over rice. Yummy!

                    Heat up some canned tomatoes, coconut milk, a little chicken broth, some diced green peppers and quickly warm the shrimp in that. Let the sauce thicken a little. Then serve over white rice, with black beans as a side. Instant caribbean glory.

                            If you like Gazpacho, you could make some of that and throw them in... sort of a mexican shrimp cocktail soup!

                              Next time you find yourself in that predicament Lonestar, just peel em, wrap em in a wonton and fry em in a wok with a couple tablespoons of oil.
                              Dip em in chili sauce or hot mustard....man that's good!

                                What am I missing here? The old-fashioned shrimp cocktail is cold boiled shrimp. Just eat 'em--with cocktail sauce (and maybe a squeeze of lemon juice).

                                  Chop'em up fine and mix into some Sour Cream. Since they are highly seasoned already, you won't even need to add seasoning to the Sour Cream. It becomes a great tasting dip for Triskits or other crackers/chips.
