Does anyone have a great recipe for New Orleans Roast Beef. I want to make some juicy New Orleans roast beef sandwhiches.....just like Mother's. Thanks.

This recipe sounds delicious and could probably work. It's a little more involved than I had hoped for and it looks intimidating. But it sure sounds good.

Everyone who has ever eaten at Mother's will surely agree......you can imitate but never duplicate. Nope, not the roast beef, or the John G. with debris or the Ferdi or the oyster po'boy.......or on and on. Mother's is........well, it's MOTHER'S!!

OK, listen up. I made a close version of the Creole roast beef recipe that was sent to me on http://www.gumbopages.com/food/roast-beef.html, I put my onions and garlic in a high powered processor and stuffed the veggies into the meat; also, stuffed it with a few slices of salt pork. Rubbed it down with some Cajun spice, thyme, and canola and olive oil and left it in the frig over night. I browned the meat on high temp on all sides to seal it (using eye of the round roast). For the remaining veggies, I again put the carrots, celey, onion, garlic, parsley into my chopper until very fine. Instead of making a homemade stock, I added water to these wonderful seasonings and veggies and a package of onion soup mix. Added enough water to cover 2/3 of the roast; covered and simmered for four hours. I didn't strain the gravy because my veggies were very fine. Let me tell you, this competes with Mother's debris any day. Now I need to find or make a good French bread. I had fun cooking this for family and friends and they loved it. Hope you do to. I just had a Mr. Beef for lunch, but now I'm getting hungry for a Mother's beef - with the debris!
