Anyone know where I might find a MidWestern establishment that serves this item?
I happened onto a taqueria in Tijauna that served the most amazing tacos. It consisted of strips of thinly sliced pork, layered on a vertical rotisserie with some kind of red pepper sauce (annato I believe) inbetween each layer. On top of the stack of pork was a pineapple slice. My friends all went to view the alleged entertainment, while I stayed behind and gained 10 or 20 pounds.
I'd also be interested in an authentic recipe. The ones I have found on the Net are mostly reverse engineered and lacking something.
